My journey to healing through food began years ago. When I was 17, I was diagnosed with hyperthyroidism. This caused sleepless nights & restlessness, heart palpitations, dizziness, tightness in my chest when exercising, skin breakouts… the list goes on. I was put on medication pretty quickly and the dose changed almost every month. The side effects from the medication were awful. I gained weight, had more skin issues, was extremely moody, and really tired all the time. It was constant bloodwork, doctor’s appointments, & specialist appointments.

About a year later, after a lot of prayer and consideration, I started a fairly strict diet of lowering sugar intake, lowering my refined carbohydrate intake, and eating millet and broccoli every.single.day. I also recall eating plain grass-fed organic yogurt. I would do chicken breasts marinated with fresh herbs, olive oil and lemon juice. And while I’m sure there were lots of other foods that I ate, these are the ones that really stick out in my memory! In addition to the dietary changes, I started taking a few herbal supplements for Thyroid health. I made sure to go for walks outside nearly every day as I had done a little bit of reading about Vitamin D and how sun exposure could aid in supporting my journey to Thyroid health (I’ll have to see if I can find a reference for this) If memory serves correctly, these changes took almost a year to pay off. I was told by my doctor that I could go off the meds!

It’s interesting to me that my passion for clean eating and holistic health has really ramped up in the last couple of years… really, I can see that my whole life has led me to this place.
